It is made with Siyez wheat, which is grown without pesticides by applying traditional agricultural methods from the genetically protected local seed in the Black Sea Region. In this process, the germ and bran of the wheat are not separated, they are preserved for their nutritional value. It is fermented with sourdough obtained from whole einkorn flour. It is cooked after 48 hours of cold fermentation.
