Ernest Soulard Mulard male ducks, also called “Fatty Ducks”, are a result of crossbreeding between a Barbary duck and a Peking duck.

The thighs of a fatty duck are primarily used to make duck thigh confit, and the excess fat can be used as drippings.

It can be confit in a homemade duck fat preparation, roasted or marinated in a sauce with some vegetables or baby potatoes.
